Chicken Enchilada Soup

Chicken Enchilada Soup

Ingredients

1small onion
1 garlic clove crushed
2T olive oil
1 can (14 oz) Beef broth undiluted
1 can (10 1/2 oz) Chicken broth undiluted
1 can (10 1/2) Creme of Chicken soup undiluted
1/2 cup mild salsa
2 cups Chicken breasts cooked and shredded
1 1/2 cup water
1T Worcestershire sauce
1 tsp ground cumin
1/8 tsp pepper
1 tsp chili powder
6 corn tortillas
3 cups Cheddar cheese

Instructions

Saute onion and garlic in olive oil. Add next 10 ingredients and bring to a boil. Cover and simmer for one hour. Cut tortillas into strips and add with cheese to soup simmer uncovered for 10 minutes
